TacoDeli Brings Bold Tacos, Handcrafted Drinks, and Austin Flavor to Katy

Katy residents craving elevated tacos and handcrafted drinks are in for a treat within the next few months. TacoDeli, the Austin-born taquería known for its award-winning salsas, farm-fresh ingredients, and cult-favorite breakfast tacos, is expanding into West Houston with a brand-new location near 19346 Katy Freeway, close to the recently opened Plucker's Wing Bar in Katy.

The fast-casual restaurant will occupy a 2,393-square-foot space in a new retail development along I-10. Construction is expected to begin this month, with completion projected by the end of this year or early 2026. Privately funded and custom-built, this project marks a key step in TacoDeli’s bold growth plan — one that’s set to double the brand’s footprint in Texas over the next three years.

A Menu That Goes Beyond the Usual Taco Shop

TacoDeli’s menu stands out not just for what’s on it — but how it’s made. Ingredients are sourced locally whenever possible, with a strong focus on organic meats, non-GMO produce, and scratch-made everything, from the tortillas to the salsas. Chef Roberto Espinosa’s original vision of “elevating the taco” still holds strong in every bite.

The breakfast lineup — served daily and drawing as much as 40% of total sales — features fan favorites like:

  • The Jess Special – scrambled eggs, migas, jack cheese, and avocado
  • The Otto – double bacon, black beans, avocado, and jack cheese
  • Freakin’ Vegan – organic beans, avocado, pico de gallo, spinach, and mushrooms

Lunch and dinner offerings lean bold and diverse, including options like the:

  • Frontera Fundido Sirloin – grilled beef with jack cheese glaze and roasted peppers
  • Puerco Verde – organic pork shoulder with salsa verde and queso fresco
  • Delibelly – pork belly with honey tomatillo-serrano salsa and avocado
  • The Heather – vegetarian taco with mushrooms, spinach, and roasted corn

For sides and starters, guests can enjoy esquites (Mexican street corn), queso, and guacamole, or go big with Fundido Party Packs ideal for family meals or gatherings.

Drinks Worth Savoring — From Swirls to Cold Brew

What truly makes the TacoDeli experience unique is its thoughtfully curated beverage menu — one that rivals many sit-down restaurants in terms of creativity and quality.

Alcoholic options include:

  • Señorita Margarita (Rocks or Frozen) – made with tequila, organic cane sugar, orange liqueur, and fresh lime juice
  • Horchata Swirl – frozen margarita mixed with housemade almond horchata
  • Seasonal Swirl – a refreshing twist featuring the frozen margarita blended with a rotating agua fresca

The Bigger Picture: Texas Today, National Tomorrow

Under the leadership of CEO Peter Gaudreau — known for scaling Snooze A.M. Eatery, Freebirds Burrito, and Punch Bowl Social — TacoDeli is primed for a new era of growth. With 15 locations already operating in Texas, the brand plans to double in size by 2028, focusing on core markets like Austin, Dallas, Houston, and soon San Antonio.

Gaudreau’s strategy also includes testing new formats like a drive-up digital order pickup window, which recently launched in Cedar Park; expanding evening hours with cozy dine-in spaces and a full cocktail menu; using data-driven tools to better understand and target fitness-conscious, quality-focused guests; and leveraging retail salsa sales in Whole Foods, H-E-B, and Kroger to inform future restaurant location planning.

The brand’s recent Cedar Park grand opening included a “Free Tacos for a Year” giveaway, live music, and charitable donations to local schools — giving a glimpse into the type of launch Katy residents might expect towards the end of this year or beginning of 2026.
