
The Dryer in Katy Launches One-of-a-Kind Shipping Container Food Court: Vendor Applications Now Open
The Dryer in Katy is turning up the heat once again—this time with a new opportunity for small business owners, food entrepreneurs, and up-and-coming culinary creatives. As part of its much-anticipated Phase II expansion, The Dryer is now accepting vendor applications for its new shipping container food stalls, a high-visibility, low-overhead setup designed to foster community, creativity, and commerce.
The announcement comes as excitement continues to build around the second phase of the redevelopment of the historic J.V. Cardiff & Sons Rice Dryer. Led by developer Andrew (Hadi) Nurcahya, the project has already gained attention across Greater Houston for its nostalgic rideable train, Katy Beer Garden success, and a vibrant farmer’s market.
Now, small food concepts have a chance to become part of what’s shaping up to be one of the most distinctive destinations in Katy.
Now Hiring Flavor Favorites
In a post shared by The Dryer this week, developers called for “fun, crowd-favorite concepts” to apply for the initial vendor openings. Specifically, they’re looking to fill shipping container stalls with:
- Boba Tea vendors
- Lemonade or Dirty Soda-style drink concepts
- Ice Cream or Milkshake operations
Each vendor space is a fully equipped, 80 sq. ft. air-conditioned container, complete with a 3-compartment sink, hand sink, and hot water—meeting all Harris County Health Department minimums. Electricity, gas, water, and sewer are included in the $1,000/month rent.

“The goal is to create a food destination that’s as unique as the venue itself,” said Nurcahya. “We want vendors who bring fun, flavor, and creativity to the table—and we’re making it turnkey so that small businesses can plug in and get started with ease.”
Details and Amenities for Vendors
According to organizers, each vendor stall measures 10 feet by 8 feet and is available for $1,000 per month, with all utilities included. Operating hours will run Friday through Sunday from 12:00 p.m. to 10:00 p.m. Each unit comes equipped with sinks, hot water, air conditioning, and full utility hookups. Vendors are responsible for providing their own cooking equipment and supplies.
With only 16 container stalls available, competition is expected to be high. The Dryer team encourages early applications, particularly from Katy-area pop-ups, home-based vendors, and start-ups looking for their first permanent setup.
A Curated Culinary Lineup Already Taking Shape
Several food concepts are already confirmed for Phase II, each chosen for their loyal following and local roots:
- Fusion Grill – Known for decadent burgers and gourmet fries, this Katy-based favorite will serve elevated American street food.
- Taqueria Tex-Taco – A beloved Katy institution with 18+ years of taco mastery.
- Jos’ Brisket – A backyard-to-business success story, now ready to serve smoked meats in a big way.
- Noodle (Asian) – Fast-casual noodles, skewers, and Asian comfort dishes in a quick-service format.
- Local Café & Bakery – A new coffee and sandwich shop is also in the works through a partnership with a local artisan baker.
“We’re building a culinary ecosystem that celebrates the diverse flavors of Katy while also giving smaller players a big platform,” Nurcahya added.

What’s Next for The Dryer in Katy
The vendor expansion is part of a larger, multi-faceted rollout for The Dryer’s second phase. in March 2025, The Dryer launched a weekly farmer's market, offering Katy locals a selection of farm-to-table produce, flowers and other artisanal goods. Currently in the works, the expanded venue will also include:
- A rideable miniature train looping around the iconic rice dryer
- A model train depot featuring a 600-sq-ft HO-scale layout
- A concessions pavilion with boba, mangonadas, popcorn, and cotton candy
- A community event lawn and stage for live music, yoga, and movies
- A Katy-themed gift shop, with proceeds supporting the Katy Heritage Society

Looking further ahead, plans are also underway to open Texas’s first full-service restaurant inside a rice dryer—a bold concept that would seat diners inside the original silos of Silo D, built in 1945.
How to Apply as a Vendor
Vendors interested in securing a spot can apply now through The Dryer’s website. Applications are being reviewed on a rolling basis, with priority given to local businesses and concepts that align with the family-friendly, community-forward focus of the development.
“This is more than a food court—it’s a destination,” said Nurcahya. “We’re inviting the best of Katy’s culinary scene to be part of something that’s built to last.”
