Biscuit Belly Joins Texas Heritage Marketplace, Bringing Southern Brunch Favorite to Katy
For west Katy families watching Texas Heritage Marketplace rise along Interstate 10, another piece of the development is now falling into place — and this one comes with biscuits.
Biscuit Belly, a fast-casual breakfast and brunch concept built around scratch-made biscuits and Southern comfort food, is planning a new restaurant at Texas Heritage Marketplace, the major mixed-use development under construction at I-10 and Texas Heritage Parkway in Waller County.
A construction filing for the project lists the restaurant at 1552 Heritage Oak Lane, Building 5A2, Suite 100, Katy, TX 77494. Plans call for a 2,800-square-foot fast-casual restaurant, with an estimated construction cost of $810,000. Interior buildout is scheduled to begin Sept. 28, 2026, with completion projected for Feb. 12, 2027. The construction timeline does not necessarily represent an official opening date.
For residents of Jordan Ranch, Tamarron, Cross Creek Ranch, Cane Island, Firethorne, Young Ranch and other communities on Katy's growing west side, Biscuit Belly's arrival adds another dining option to a commercial district increasingly designed to make everyday shopping, meals and services easier to find closer to home.
What Is Biscuit Belly?
Founded by husband-and-wife team Chad and Lauren Coulter in Louisville, Kentucky, in 2019, Biscuit Belly has built its identity around an increasingly popular corner of the breakfast market: chef-inspired Southern food served in a quick, casual setting.
The company's biscuits are made from a proprietary recipe developed by Executive Chef Tavis Rockwell and baked fresh daily, according to the restaurant. Its menu centers on biscuit sandwiches and Southern-inspired brunch dishes rather than a traditional full-service breakfast format.
Depending on the location and current menu, diners may find combinations featuring buttermilk fried chicken, bacon, sausage, smoked brisket, eggs, cheese and gravy, along with shareable breakfast dishes and sweeter options. One of the brand's signatures is taking familiar Southern breakfast ingredients and turning them into oversized biscuit sandwiches meant to feel a little less ordinary than a weekday breakfast on the run.
The Katy restaurant comes as Biscuit Belly is entering a significant growth period nationally and in Texas. The company recently announced its acquisition of 35 Maple Street Biscuit Company restaurants, which it plans to convert to Biscuit Belly locations over roughly 18 to 24 months. Texas locations included in those planned conversions are in Mansfield, Alamo Ranch and Bee Cave. Biscuit Belly's website also currently lists a Houston Heights restaurant as coming soon.
That expansion is expected to take the company to more than 60 locations by the end of 2028.
Another Restaurant Joins a Growing Texas Heritage Marketplace Lineup
Biscuit Belly is arriving amid a steady stream of tenant announcements at Texas Heritage Marketplace, the approximately 165-acre, $400 million mixed-use project being developed by Houston-based NewQuest.
The latest leasing materials describe the project as a 750,000-plus-square-foot mixed-use retail and regional destination and place Biscuit Belly directly within its tenant directory. The same materials show a growing mix of restaurants, retailers, fitness, services and major anchors planned across the property. The development sits within five miles of approximately 144,545 residents, according to 2025 ESRI data included by NewQuest.
My Neighborhood News has followed Texas Heritage Marketplace as that tenant mix has developed.
Previous announcements have included major retailers Target, Lowe's and Sam's Club, along with Academy Sports + Outdoors, Burlington, Ulta Beauty, Bath & Body Works and Spec's.
The dining lineup has grown alongside them. My Neighborhood News previously reported plans for Whataburger, while other announced restaurants include Escalante's, Tony C's, Aji Izakaya and Kilwins around the project's green-space component.
In June, NewQuest also finalized long-term leases with Mattress Firm, James Avery and The Kebab Shop, another step toward filling out the center well before its various phases open to the public.
The latest project brochure expands that picture further, showing Biscuit Belly alongside names including CAVA, Jersey Mike's, Dave's Hot Chicken, Texas Roadhouse, Olive Garden, 7 Brew Coffee and others in the current tenant plan. Some spaces and concepts shown in leasing materials remain identified as proposed, in negotiation or otherwise subject to change as the project develops.
Why Texas Heritage Marketplace Matters to West Katy
The individual tenant announcements are beginning to tell a larger story.
For years, residential development has steadily pushed west of Katy while much of the area's established regional shopping remained farther east. Texas Heritage Marketplace is being built to help close that distance, positioning a large concentration of retail, restaurants and services near some of the communities contributing most heavily to west Katy's population growth.
NewQuest's current materials report approximately 145,000 people living within five miles of the development and identify nearby master-planned communities including Cane Island, Cross Creek Ranch, Firethorne, Jordan Ranch, Young Ranch and Tamarron. Texas Heritage Parkway also provides a completed 6.5-mile connection between the Fulshear area at FM 1093 and I-10.
That means a new breakfast restaurant is about more than another place to order biscuits.
As Target, Sam's Club, Lowe's and dozens of smaller restaurants and businesses take shape, west Katy residents are gradually gaining a commercial center capable of handling more of the errands, meals and everyday stops that once required a longer drive toward established retail corridors.
Biscuit Belly gives that evolving destination something else: another reason to visit in the morning.
If construction proceeds according to the current filing, the restaurant's interior should be completed in February 2027. An official grand opening date, operating hours and Katy-specific menu details have not yet been announced.
For residents who have watched empty land along this stretch of I-10 steadily give way to construction equipment, building pads and recognizable storefronts, those announcements are becoming increasingly tangible signs of what Texas Heritage Marketplace will eventually look like when the doors begin opening.
