Laika Cheesecake Expands in San Antonio, Bringing Gourmet Jarred Desserts to Growing Northside Community

San Antonio / New Braunfels  /  San Antonio / New Braunfels
April 10 2026

In a part of North San Antonio where new rooftops, schools, and storefronts continue to take shape, another locally grown favorite is preparing to join the mix—bringing with it a dessert concept that many residents already recognize and seek out across the city.

Laika Cheesecake & Espresso, a Ukrainian-owned San Antonio favorite known for its layered jarred cheesecakes and rotating flavors, is planning a new location at 2230 TPC Parkway, Suite 1103. According to official permit filings, the 1,471-square-foot interior finish-out project is scheduled to begin May 8, 2026, with completion anticipated by November 9, 2026.

For nearby neighborhoods, the addition is more than just another sweet stop—it’s a sign of continued retail growth and increasing dining options in one of San Antonio’s most active development corridors.

A Local Brand Growing with San Antonio

Founded in 2020 by Anna Afanasieva, Laika Cheesecake & Espresso has steadily built a following across the San Antonio area and New Braunfels. The concept blends European-inspired baking techniques with a distinctly modern presentation—most notably its signature cheesecakes served in reusable glass jars.

Named after Laika, the first Soviet space dog, the brand has carved out a niche with desserts that feel both playful and carefully crafted.

From its original Broadway location in Alamo Heights to additional sites across the region, Laika’s growth reflects a broader trend: locally owned specialty dessert shops gaining traction in fast-growing Texas markets.

The upcoming TPC Parkway location positions the brand closer to residential communities, schools, and office hubs—making it a convenient option for families, professionals, and visitors alike.

What Makes Laika Cheesecake Different

At its core, Laika’s appeal comes down to quality and creativity.

Each cheesecake is made from scratch using high-quality ingredients, resulting in a texture often described as light, silky, and balanced. But it’s the variety—and the constant rotation—that keeps customers coming back.

Popular and rotating flavors include:

  • New York Strawberry
  • Tres Leches
  • Cookies & Cream
  • Toffee Turtle
  • Raspberry Lemonade
  • “Space Jam” (a signature layered favorite)
  • Seasonal options like pumpkin or specialty blends

Beyond traditional slices, Laika’s jarred desserts offer layered combinations of cheesecake, mousse, compotes, and crunch elements—designed for both convenience and visual appeal.

The menu also includes more elaborate creations like “Midnight Berry,” a multi-layered dessert featuring chocolate cake, berry cheesecake, ganache, and infused jam, reflecting the brand’s willingness to push beyond standard bakery offerings.

Meeting Modern Dietary Preferences

As more consumers search for gluten-free desserts in San Antonio, sugar-free cheesecake options, and even keto-friendly treats near me, Laika has positioned itself to meet those needs.

The bakery offers sugar-free cheesecakes (erythritol-sweetened), gluten-free options, and customizable sweetness levels in drinks.

This flexibility has become a key differentiator, particularly for families or individuals balancing dietary restrictions without wanting to skip dessert altogether.

More Than Dessert: A Full Café Experience

The new TPC Parkway location will also continue Laika’s espresso and beverage program, making it as much a café as it is a dessert shop.

Customers can expect:

  • Classic espresso drinks like cappuccinos, cortados, and lattes
  • Specialty beverages such as tres leches lattes and Italian shaken espresso
  • Matcha, chai, and handcrafted lemonades
  • Refreshers and caffeine-free options like raspberry lavender seltzers

This combination of coffee and dessert in San Antonio has helped Laika attract a wide audience—from morning coffee runs to evening dessert outings.

What Happens Next

Construction is expected to begin in May 2026, with doors projected to open later that fall if timelines hold.

As the build-out progresses, residents can expect more details on grand opening plans, menu highlights, and potential community events tied to the launch.
