Austin-Born Torchy’s Tacos Plans New Restaurant at EastVillage on East Parmer Lane

An Austin restaurant brand that started with one food trailer and a red Vespa is preparing to put down roots in one of Northeast Austin’s largest new mixed-use developments.

Torchy’s Tacos is planning a restaurant at EastVillage, 3500 East Parmer Lane, Suite 10150, in Austin, according to a state project filing. The proposed location would occupy 2,790 square feet in EastVillage Retail Building 10, adding a familiar Austin name to a part of the city that continues to gain homes, workplaces, restaurants and entertainment options.

The filing lists an estimated construction cost of $850,000 for a tenant interior finish-out. Work is currently scheduled to begin Nov. 9, 2026, with completion projected for March 22, 2027.

Those dates represent the construction timeline filed with the state and do not necessarily establish when the restaurant will open. Torchy’s has not publicly announced a grand-opening date for the EastVillage location.

For residents and employees around East Parmer Lane, Tech Ridge and Northeast Austin, however, the filing offers another sign of the commercial activity taking shape around EastVillage — and this tenant comes with especially deep Austin roots.

Torchy’s Tacos Heads to Austin’s Growing Northeast Corridor

EastVillage is a 425-acre mixed-use community along East Parmer Lane, directly across from Samsung Austin Semiconductor and near a large concentration of technology and corporate employers. Plans for the development include residential neighborhoods along with retail, restaurants, offices, hotels, entertainment and outdoor gathering spaces.

That combination could give the planned Torchy’s location a customer base extending well beyond the people who eventually live within EastVillage itself. The development sits near major employment centers and serves a broader Northeast Austin corridor with connections to Pflugerville, Round Rock and Manor.

EastVillage has been steadily assembling its restaurant and retail mix. The development previously announced businesses including Club Studio, Swish Dental and 810 Billiards & Bowling, while other state filings have documented restaurant and specialty-food build-outs on the property.

Adding Torchy’s would be particularly notable because the company is not simply another national chain arriving in Austin. It is a national restaurant company that grew out of Austin.

From an Austin Food Trailer to More Than 130 Restaurants

Torchy’s Tacos traces its story to 2006, when founder and chef Mike Rypka opened the company’s first food trailer in Austin.

According to the company, Rypka promoted the fledgling business by riding around town on a red Vespa and handing out taco samples. Customers began describing the food with the phrase that would ultimately become the company’s longtime slogan: “Damn Good.”

Twenty years later, Torchy’s has expanded far beyond its hometown. The company said in more recent brand materials that it operates more than 130 restaurants across the United States, while continuing to identify Austin as the birthplace of the business.

Austin remains one of the brand’s strongest markets. Current listings show 11 Torchy’s restaurants within Austin city limits, with additional locations around the Greater Austin area, including Cedar Park, Round Rock and Lakeway.

Its South Congress restaurant at 1822 S. Congress Ave. also serves as a prominent Austin flagship and has been used for special events and national brand promotions.

The proposed EastVillage restaurant would extend that local footprint farther into Northeast Austin, placing Torchy’s close to one of the region’s major technology employment corridors.

What Makes the Torchy’s Tacos Menu Different?

Torchy’s built its reputation around tacos that often stray well beyond traditional combinations.

The brand emphasizes made-to-order food and describes its approach as putting unexpected ingredients and flavors into tacos rather than relying only on familiar Tex-Mex formulas. Its menu has expanded over the years while keeping tacos and queso at the center of the business.

Among its best-known offerings are the Trailer Park taco and Green Chile Queso, along with an all-day breakfast menu. The current menu also includes tacos, burritos, salads, Torched Bowls, family meals, chips and dips, desserts and drinks.

Breakfast choices include migas, brisket-and-egg combinations, breakfast tacos and a breakfast burrito. Torchy’s has also made rotating and limited-time creations part of its identity, giving customers something different alongside the long-running favorites.

The company says tortillas are house-pressed, queso is prepared fresh throughout the day and food is made to order — an approach that has helped Torchy’s occupy a middle ground between fast-casual convenience and the kind of menu experimentation associated with independent taco shops.

An Austin Brand Returning to Its Roots as It Grows

There is a certain full-circle quality to Torchy’s expanding within its hometown.

Many Austin residents knew the company before its restaurants appeared in cities across Texas and other states. Its growth from a small trailer operation into a restaurant brand with more than 130 locations has made Torchy’s one of the more recognizable food businesses to emerge from Austin during the city’s modern growth era.

At the same time, Northeast Austin looks considerably different than it did when Torchy’s began serving tacos in 2006.

EastVillage itself is being developed as a combination of housing, commercial space and gathering places rather than a conventional standalone shopping center. The project is planned around a town-center concept, with restaurants and retail intended to serve residents as well as the thousands of people working throughout the surrounding technology corridor.

That makes the planned Torchy’s more than another pin on the company’s location map. For nearby neighborhoods and workers, it would add another everyday dining option in a section of Austin where development is steadily creating a larger live-work-play district.

And for an Austin-born brand that once relied on a food trailer and hand-delivered samples to build a following, opening another restaurant in a fast-changing corner of its hometown would mark another chapter in a story that has grown alongside the city itself.

What Happens Next for Torchy’s at EastVillage?

According to the project information filed with the state, the $850,000 renovation and restaurant finish-out is scheduled to run from November 2026 through March 2027.

Construction schedules can change, and a projected completion date should not be interpreted as an official restaurant opening date. Details such as hiring, operating hours, an opening celebration and the location’s final menu have not yet been announced.

Still, the filing gives Northeast Austin residents their clearest indication yet that Torchy’s Tacos is headed to EastVillage.
