PopUp Bagels Plans First Austin Shop at Domain NORTHSIDE’s Rock Rose District
For North Austin residents who have watched Domain NORTHSIDE grow into a destination for shopping, dining and nightlife, another nationally recognized food brand appears to be joining the neighborhood.
PopUp Bagels is planning a 1,425-square-foot shop at 11501 Rock Rose Avenue, Suite 152, within Domain NORTHSIDE’s Rock Rose District. According to a recently filed Texas construction project, the estimated $350,000 renovation would convert an existing second-generation restaurant space into a takeout-only PopUp Bagels location.
Construction is currently scheduled to begin Aug. 1, 2026, with completion targeted for Sept. 15, 2026. The filing does not provide an official opening date, and construction schedules can change.
What PopUp Bagels Could Bring to Domain NORTHSIDE
Unlike a traditional bagel shop built around made-to-order breakfast sandwiches and a large dining room, PopUp Bagels keeps its concept intentionally simple. The brand is known for serving hot, unsliced bagels alongside containers of cream cheese, encouraging customers to tear the bagels apart and dip them into the schmear.
That approach is summed up by the company’s trademarked “Grip, Rip and Dip” experience.
The planned takeout-only format on Rock Rose Avenue appears to fit the brand’s streamlined model while also complementing Domain NORTHSIDE’s steady flow of residents, office workers, shoppers and visitors looking for quick breakfast or daytime food options. Rock Rose is promoted by Domain NORTHSIDE as a North Austin dining, entertainment and nightlife district.
For the surrounding community, the project would add a new grab-and-go breakfast stop near apartments, offices, retail stores and entertainment venues. It would also give Austin customers their first local opportunity to try a bagel concept that has built a substantial following through social media, limited menu drops and word-of-mouth enthusiasm.
From a Connecticut Backyard to a Growing Bagel Brand
PopUp Bagels began in Westport, Connecticut, in 2020, when founder Adam Goldberg started baking bagels as a pandemic-era hobby and sharing them with friends and neighbors. Growing demand turned the backyard operation into a preorder pop-up, followed by subscriptions, permanent shops and a broader franchise expansion.
The company has since expanded beyond Connecticut into markets that include New York, Massachusetts and several additional states. Its official location directory currently lists shops and pickup locations across a growing number of regions, including Texas.
PopUp Bagels announced in March 2026 that it planned at least 12 Texas locations across major markets including Dallas, Houston, Austin and San Antonio. The Domain NORTHSIDE project provides a more specific look at where the brand may establish its Austin presence.
The Austin development follows other recent Texas expansion activity, including Dallas-area shops, a Houston location at CityCentre and a planned PopUp Bagels at LaCenterra at Cinco Ranch in Houston's Katy area.
What Is on the PopUp Bagels Menu?
The menu centers on fresh, hot bagels paired with classic, specialty and limited-edition schmears. Rather than automatically slicing and assembling each bagel, the company typically serves bagels whole so customers can pull them apart and dip each piece.
PopUp Bagels’ official menu also lists smoked salmon, hot drip coffee, La Colombe cold brew, bottled juices, lemonade and catering options. Available bagel varieties and rotating schmear flavors may differ by location and season.
The limited menu is part of what separates the brand from many full-service breakfast restaurants. PopUp Bagels focuses on the bagel itself—the crisp exterior, soft interior and experience of eating it while it is still hot—rather than offering an expansive lineup of sandwiches and café meals.
Why the Rock Rose Location Matters for North Austin
Domain NORTHSIDE and the larger Domain area have become one of Austin’s most active mixed-use districts, bringing housing, employment, shopping, restaurants and entertainment into a relatively concentrated part of North Austin.
A takeout-focused bagel shop could serve several parts of that community at once: residents picking up breakfast, employees heading into nearby offices, weekend shoppers and visitors spending time along Rock Rose Avenue.
The relatively compact 1,425-square-foot footprint also shows how restaurant operators continue to adapt existing commercial spaces for concepts built around convenience and pickup service. Because the project involves an interior alteration rather than construction of a new building, much of the work is expected to take place inside the former restaurant space.
PopUp Bagels’ arrival would also add another breakfast-oriented concept to an area often associated with evening dining and nightlife. That could help bring additional morning and midday activity to the Rock Rose District while giving nearby residents and workers another locally accessible option.
What Happens Next
Renovation work is expected to run from early August through mid-September 2026, according to the project filing. An official grand opening, operating hours and Austin-specific menu have not yet been announced.
As plans move forward, residents can expect additional details from PopUp Bagels or Domain NORTHSIDE regarding the opening timeline and ordering options.
