Katy Resident Shares Thanksgiving Leftovers Creations
With Thanksgiving behind us, many of our refrigerators are crammed with bags or containers full of leftovers. From carved turkey to mashed potatoes, cranberry sauce to stuffing and partially cut pies, there's so much you can do with leftovers to breathe new life into your holiday favorites.
Katy area resident, Lisa Henneke, is well known in her family as a culinary master in the kitchen. In a former life, she opened and ran a Mexican fusion restaurant in Cozumel, serving up fresh local food with a twist to delight islanders and tourists alike. Today, she utilizes her passion for cooking to prepare and share delicious, creative recipes with family and friends for get togethers, holiday celebrations and everyday meals.
Coming from a long line of talented home cooks, her mom helped foster her love of cooking at a young age, passing down family recipes and cherishing time together in the kitchen often. Her dad was also a fine cook, specializing in Cajun cuisine that always drew a crowd and left an impression on those who were lucky enough to enjoy his cooking.
"Cooking speaks to the soul. It's a time to make memories and passing down family traditions. Everyone comes together and shares with a thankful heart for all we have. I love honoring family traditions and making new ones," said Henneke.
"I'm not a rule follower so baking is not in my wheelhouse. I love to create new dishes with my own personal flair, especially by making something different out of food I have already prepared. Nothing goes to waste in my kitchen and I love cooking for my boys," said Henneke.
Turkey Panini
Turkey breast, brie cheese, cranberry sauce, light layer of dressing on baguette bread then grilled in a panini press or an iron skillet with melted butter.
Turkey Soup with Egg Noodles
Turkey breast, chicken stock or homemade turkey stock with celery, onions, carrots and egg noodles.
Turkey Flautas
Shredded turkey, tomatoes, onion, chopped jalapeno, chopped garlic and fresh chopped cilantro rolled up in corn tortillas and deep fried in vegetable oil.
Turkey Shepherd's Pie
Layer in a casserole dish stuffing on bottom then turkey, green bean casserole, and mashed potatoes and bake until mashed potatoes are a golden brown.
Turkey Salad
Turkey, mayonnaise, cranberry sauce, terragon, salt and pepper on baguette bread or over salad greens Turkey Pot Pie Turkey, cream of chicken, diced onion, peas, carrots in a pie shell with pie crust sheet on top and bake.
Sweet Potato Pancakes
Fold mashed sweet potatoes into prepared pancake mix and cook as directed.
"The holidays are not a time to be stressed. So many people put high expectations on themselves that they can't enjoy the holidays. Enjoy time with your family and keep it simple," said Henneke.
