Sandwich lovers in Katy have something tasty to look forward to this winter. Firehouse Subs is officially building out a new location at 23027 Morton Ranch Rd, Suite 400, Katy, TX 77449, inside the bustling Morton Park Plaza shopping center. The sub shop, known for its hearty sandwiches and firefighter-themed décor, is expected to open its doors to the public by December 19, 2025.
According to state permit filings, construction will begin towards the end of September 2025, with a full interior buildout planned for the 1,500-square-foot space. The project is a privately funded renovation, with an estimated cost of $375,000, aimed at transforming the suite into a fully operational sandwich shop within the multi-tenant retail plaza.

Founded in 1994 by firefighter brothers Chris and Robin Sorensen, Firehouse Subs was born from a desire to combine their love for hearty food with a mission of giving back. The chain quickly became a fan favorite for its steamed meats, toasted sub rolls, and generous portions, along with its strong community outreach through the Firehouse Subs Public Safety Foundation. The foundation has donated over $85 million to support first responders across the U.S., including life-saving equipment grants right here in Texas.
