This launch marks a major milestone for both The Waffle Bus and Bridgeland foodies who have been eagerly awaiting the brand’s award-winning twist on southern comfort food.
Known for its playful slogan, “Everyday I’m Wafflin’,” The Waffle Bus has been a staple of Houston’s culinary scene for 12 years, starting as a food truck and evolving into a foodie favorite with brick-and-mortar locations in the Heights, Montrose, and Derby, Kansas. The Bridgeland location promises to bring that same energy—and menu—that fans have followed across Houston streets for more than a decade.
A Menu That Breaks the Mold
The Waffle Bus built its reputation on a bold approach: grinding its own flour to achieve the perfect waffle texture—crispy outside, fluffy inside—and testing over 100 recipes to get it just right. The Bridgeland location will feature fan favorites, including the Buttermilk Fried Chicken and Waffle Sandwich with Thunder Sauce, the fiery MacDaddy Hot Chicken Sandwich layered with white cheddar mac and cheese, and the innovative Chicken Fryders™, sliders made with seasoned waffle fries instead of buns.

Founder Phi Nguyen, who launched the concept in 2010 during a period of joblessness, took inspiration from Houston’s food truck scene and decided to bring something different. “The community is beautiful, and I’m excited to bring the Waffle Bus to Bridgeland to bring something new to the area,” Nguyen said when the Bridgeland project was announced last year.
