Levain Bakery Plans First Texas Location at Domain Northside in Austin
Austin’s dessert scene appears set to welcome one of New York City’s most recognizable bakeries, with Levain Bakery planning its first Texas location at Domain Northside.
A recently registered construction project identifies a 1,555-square-foot Levain Bakery at 3120 Palm Way in North Austin. The privately funded renovation is estimated to cost $750,000, with construction scheduled to begin Oct. 1, 2026, and conclude March 1, 2027. As with most early construction filings, the projected cost and timeline could change as plans move forward.
For Austin residents, the project would bring another first-to-market food destination to the Domain area, giving local cookie fans their first Texas storefront where they can experience Levain’s famously thick cookies fresh from the oven rather than ordering them for nationwide delivery.
A New York Bakery Institution Heads to Austin
Levain Bakery began in 1995 as a small bread shop on West 74th Street in Manhattan. Founders Pam Weekes and Connie McDonald were friends, bakers and recreational triathletes who initially made bread for several New York restaurants.
The bakery’s name comes from the French term for naturally leavened bread, reflecting its original focus on handmade loaves, baguettes and rolls. Its eventual signature product, however, was not part of the original business plan.
While training for triathlons, Weekes and McDonald developed an oversized chocolate chip walnut cookie as a hearty source of energy. The experimental cookies quickly sold out at the bakery, eventually becoming the product most closely associated with the Levain name.
Three decades later, Levain has grown from its original Upper West Side shop into a national bakery brand with locations in New York, California, Illinois, Washington, D.C., Maryland, Massachusetts and Pennsylvania. Additional shops are planned in Newport Beach, California, and Miami’s Coconut Grove neighborhood. The Austin bakery is expected to become the company’s first location in Texas.
What Levain Bakery Is Known For
Levain Bakery’s centerpiece is its original six-ounce Chocolate Chip Walnut cookie, known for a crisp exterior and a thick, soft center filled with chocolate chips and walnuts.
The bakery’s cookie selection also includes Two Chip Chocolate Chip, Dark Chocolate Chocolate Chip, Dark Chocolate Peanut Butter Chip, Caramel Coconut Chocolate Chip, Oatmeal Raisin and a vegan and gluten-free version of the Chocolate Chip Walnut cookie. Seasonal and limited-time varieties have included Raspberry Pistachio and Rocky Road.
Although its oversized cookies receive much of the attention, Levain remains a full neighborhood bakery. Menus at existing locations can include baguettes, country boules, ciabatta, brioche, blueberry muffins, scones, sticky buns, loaf cakes and savory flatbreads.
Some bakeries also serve sandwiches, coffee, espresso drinks, cold brew, tea, hot chocolate and the company’s Cookie Milk Latte, made with milk steeped with Levain cookies and layered with coffee, salted cold foam and cookie crumbles. Exact offerings at the Austin Levain Bakery have not yet been announced and may vary from menus at other locations.
Customers outside the company’s bakery markets can already order cookies, assortments, subscriptions and gift sets through Levain’s nationwide shipping business. The brand says its cookies are baked fresh and shipped the same day.
Why Domain Northside Fits the Brand
Domain Northside has become one of North Austin’s busiest shopping, dining and entertainment districts, blending national retailers with restaurants, hotels, residences and community gathering areas.
The mixed-use destination includes approximately 600,000 square feet of retail and restaurant space and has positioned itself as a home for both established national names and brands making their first move into Austin.
Levain’s neighborhood-focused bakery model could fit naturally into that environment. Its locations are generally designed as places where customers can stop for a cookie and coffee, pick up bread for home or share a box of baked goods with friends, family members or coworkers.
The brand also emphasizes community support as part of each bakery opening. According to Levain, new locations donate their opening-day proceeds to a local charitable organization. The company also donates unsold baked goods at the end of each day. Details about a potential Austin nonprofit partner have not been announced.
A Major Addition to Austin’s Bakery Scene
The proposed Levain Bakery at Domain Northside would arrive in a city with no shortage of respected bakeries, coffee shops and dessert destinations. Its opening would nevertheless represent a noteworthy Texas debut for a business whose original Manhattan location became a destination for both New Yorkers and visitors.
For longtime fans, the Austin location could mean skipping the shipping box and enjoying one of Levain’s signature cookies while it is still warm. For those encountering the bakery for the first time, it will offer an opportunity to decide whether a nearly half-pound cookie can live up to three decades of attention.
No official opening date has been announced. Based on the preliminary construction schedule, work is expected to conclude in March 2027, though the bakery may require additional preparation before welcoming customers.
