Wild Eggs Bringing Its First Texas Restaurant to Cypress on Fry Road

Cypress breakfast fans will soon have a new name to get to know, and this one comes with a Texas first.

Wild Eggs, a breakfast, brunch and lunch concept that got its start in Louisville, Kentucky, is preparing to open its first Texas restaurant at Cypress Creek Plaza, 9814 Fry Road, Suite 240, in Cypress. The restaurant will take over the former Sapporo Japanese Steakhouse space, bringing a new daytime dining option to the busy Fry Road corridor.

Construction filings show plans for a $730,000 renovation of the existing 4,107-square-foot restaurant suite. The project includes a new dining area, kitchen and restrooms, along with related mechanical, electrical and plumbing work. Construction is scheduled to begin Oct. 15, 2026, with an estimated completion date of Jan. 15, 2027.

The construction timeline is not the same as an announced opening date, and Wild Eggs has not yet posted the Cypress restaurant among its open locations. Still, the project offers Cypress residents their clearest look yet at what is coming to the former Sapporo space.

A Louisville Breakfast Concept Heads to Cypress

Wild Eggs was founded in Louisville in 2007, beginning with a focus on scratch-made breakfast and hospitality that feels personal rather than hurried. Nearly two decades later, the company currently lists 19 open restaurants across Kentucky, Indiana and Ohio.

Cypress represents a significant step in that growth. While Wild Eggs has been laying the groundwork for expansion into additional markets, its current restaurant directory does not list an existing Texas location. The Cypress Creek Plaza restaurant is expected to become the brand's first in the state. Wild Eggs has also identified Texas as part of its broader expansion plans, with Dallas and Austin among markets targeted for future development.

Houston has been on the company's radar as well. Earlier in 2026, Wild Eggs CEO Andy Abbajay discussed Houston as one of the new markets coming into focus for the growing brand, describing the region as having a strong dining culture that fits the company's expansion strategy.

For Cypress, that means a national expansion story is landing at the neighborhood level, in an existing restaurant space along Fry Road.

What Is Wild Eggs?

Despite the playful name, the Wild Eggs menu reaches well beyond eggs.

The restaurant describes itself as a scratch kitchen, with dishes cooked to order each morning. Eggs are cracked by hand, hollandaise is made fresh and the brand has built much of its identity around taking familiar breakfast and brunch foods in more creative directions.

Among its longtime signatures is a house-made cinnamon roll baked in a cast-iron skillet and finished with vanilla bean icing. The menu provided by Wild Eggs also includes the Mad Platter, with three eggs, bacon, sausage, potatoes or grits, bread and a buttermilk pancake; the Kelsey KY Brown, made with roasted turkey, bacon, tomato, white cheddar mornay and a fried egg on sourdough; and Kalamity Katie's Border Benedict, featuring green chile cheddar corn cakes, chorizo, poached eggs, queso fundido, pico de gallo and avocado.

Guests looking for sweeter breakfast choices can find pancakes, Belgian waffles and several versions of French toast, while the savory side of the menu ranges from omelets and Benedicts to chilaquiles, breakfast burritos, skillets and casseroles. Wild Eggs also serves burgers, sandwiches and salads for diners who arrive closer to lunchtime.

Coffee and espresso drinks are part of the menu, as are fresh-squeezed orange juice, lemonade and brunch cocktails such as mimosas and the restaurant's Proud Mary Bloody Mary. Gluten-friendly selections are available across several menu categories.

What Makes Wild Eggs Different

Wild Eggs has leaned heavily into the idea of the neighborhood breakfast restaurant, where the food matters but so does becoming a familiar place for regulars. The company says every plate is cooked to order and points to scratch preparation and hospitality as central parts of its identity.

That approach has remained part of the concept as Wild Eggs has expanded beyond Louisville. The company's restaurants generally operate from early morning into mid-afternoon, keeping the focus squarely on breakfast, brunch and lunch rather than stretching into dinner service.

For Cypress families, weekend brunch groups and residents searching for new breakfast restaurants near Bridgeland and along Fry Road, the upcoming location will introduce a concept that has spent years building its following in the Midwest before making the jump into Texas.

What Happens Next for Wild Eggs in Cypress

According to the project filing, work at 9814 Fry Road is expected to continue through mid-January 2027. Because construction schedules can change and restaurant openings typically require additional inspections, hiring, training and final preparations, an exact grand opening date should come later.

What is clear is that Cypress is getting more than another location of an already familiar Texas chain. Wild Eggs is using the community as its entry point into the state, giving local diners the first opportunity in Texas to see what has kept the Louisville-born breakfast concept growing since 2007.

For a Fry Road dining corridor that continues to add new restaurants and businesses alongside Cypress's residential growth, Wild Eggs will bring another breakfast and brunch choice to the mix, this time with the distinction of being the brand's Texas debut.
