Stone Cold Meats Is Coming to Katy in 2027, Taking Over Former Meat Masters Butcher Shop on Fry Road

Katy residents who remember stopping by Meat Masters for steaks, cuts of meat and butcher-counter service will soon find a new name behind the counter at the familiar South Fry Road location.

Stone Cold Meats is coming to Katy in 2027, with the family-owned Texas butcher shop preparing to open its fourth location at 2020 S. Fry Road, Suite G, in the former home of Meat Masters, Inc.

Rather than starting with an empty retail shell, owners Sean and Ami Stone are taking over a space that already has a history as a neighborhood butcher shop. Over the coming months, they plan to renovate the location inside and out, install new signage and adapt the relatively small storefront to the Stone Cold Meats concept.

For Katy-area shoppers, the transition represents both a change and a continuation. The name over the door will be different, but the property will remain tied to the meat-market business that has served customers there for years.

Former Meat Masters Location Begins a New Chapter

Meat Masters was a family-owned and operated Katy business led by longtime residents Marvin and Kathy Kropelnicki. According to the company's background information, the couple brought about 30 years of meat-industry experience to the business when they decided to establish it in the Katy community.

Now, Stone Cold Meats plans to build on the site's butcher-shop history while giving the space a distinctly different identity.

The company recently gave future customers a first look at its plans for the property, explaining that the existing butcher-shop infrastructure gives the team a starting point but that substantial changes are ahead.

“Our future Katy home was previously a butcher shop, so we’re not starting with an empty shell. But by the time we’re finished, it’s going to look and feel like Stone Cold Meats,” the company shared.

Plans include new signage and improvements to both the interior and exterior, along with the products, displays and customer experience associated with Stone Cold Meats' existing stores.

The company said the Katy shop will be its smallest storefront to date, making efficient use of the available space an important part of the renovation.

“Our goal is to take everything you love about Stone Cold Meats — the quality, the variety, the creativity, the service and the old-school butcher experience — and make every square foot count,” the company said.

Who Is Stone Cold Meats?

For Katy residents who have not encountered the business at one of its other Houston-area locations, Stone Cold Meats traces its roots to 2018, when Sean and Ami Stone opened their first butcher shop in League City.

Sean Stone's experience in the meat industry began much earlier.

He started working in small butcher shops in Illinois at age 16, learning the trade from owners who placed an emphasis on both their craft and their communities. He later accumulated nearly two decades of industry experience, including managing meat markets for a large corporation, before he and Ami decided to establish their own business.

According to the company's history, one of the experiences that helped shape that decision was seeing corporate policies require unsold but otherwise usable meat to be discarded. Sean and Ami Stone wanted to create a business centered instead on quality, transparency and community responsibility.

That became Stone Cold Meats.

After opening in League City in 2018, the company expanded to Cypress in 2021 and Conroe in September 2024. The planned Katy butcher shop will become its fourth location.

Despite that growth, the Stones emphasize that the company remains independently owned rather than becoming a franchise or large corporate operation.

“But most importantly, we are still a family-owned business. We're not a franchise. We're not a big corporation. We're a husband-and-wife team who is still very much involved in the business every single day,” they shared while introducing themselves to Katy customers.

What Katy Shoppers Can Expect From Stone Cold Meats

Stone Cold Meats describes its concept with the phrase “Old School Butcher. New Age Approach.”

In practice, the business combines traditional butcher-counter service and meat-cutting knowledge with a rotating assortment of prepared and specialty products intended to give customers more options for grilling and cooking at home.

The company cuts meat, makes its own sausages and produces stuffed and marinated meats. It also develops specialty creations and flavors designed for the grill, giving the meat cases a mix of traditional butcher-shop staples and less conventional options.

That approach could make the new Stone Cold Meats Katy location particularly relevant for residents searching for a Katy butcher shop, fresh meat market, specialty meats, steaks, sausage, marinated meats or grilling options near Katy.

The Stones have also indicated that customer interaction will play a role as they prepare the new store. They have been asking Katy residents what they want from a neighborhood butcher shop and plan to use social media to introduce customers to the company, including where its meat comes from, what distinguishes its products and what shoppers can expect to see in the cases.

Katy Store Transformation Will Unfold Over the Coming Months

There is still work to do before customers can walk through the doors.

Stone Cold Meats has not announced a specific opening date beyond 2027, but the company plans to document the renovation over the next several months, giving Katy residents a behind-the-scenes look at the process.

“We’ll show you the good, the messy, the before-and-afters and everything it takes to get those doors open in 2027,” the company said.

That means residents following the project should get more than a finished-store reveal. Stone Cold Meats plans to share the transformation as the former Meat Masters space changes hands, from renovation work and new signage to the eventual stocking of the cases.

For a location that already spent years serving Katy as a neighborhood meat market, the transition adds another chapter rather than an entirely new use.

The names and owners may be changing, but the South Fry Road storefront will continue its connection to a trade built around something fairly simple: helping neighbors figure out what they are putting on the dinner table or the backyard grill.

Stone Cold Meats Katy is planned for 2020 S. Fry Road, Suite G, with an opening expected in 2027. A specific grand opening date has not yet been announced.
