Original ChopShop Plans 2027 Katy Opening Near I-10 and Katy Fort Bend Road
Katy residents looking for another quick meal that falls somewhere between grab-and-go convenience and a more health-conscious restaurant will soon have a new option along the Katy Freeway.
Original ChopShop is planning a new Katy, Texas, location at 24646 Katy Freeway, Suite 400, near the intersection of I-10 and Katy Fort Bend Road and in close proximity to Katy Mills. The restaurant brand’s own website now lists the Katy shop as “Opening 2027,” giving the Houston-area suburb its first Original ChopShop location.
Construction filings show a $450,000 tenant finish-out planned for an existing 3,200-square-foot lease space. Work is scheduled to begin Nov. 16, 2026, with an estimated completion date of April 16, 2027. The privately funded project is classified as a renovation and alteration rather than ground-up construction.
An exact grand-opening date has not yet been announced, and construction schedules can change.
What Is Original ChopShop?
Original ChopShop began in Old Town Scottsdale, Arizona, in 2013, built around the idea of providing convenient food made from whole ingredients without forcing customers into a one-size-fits-all definition of healthy eating.
The company describes its shops as places where guests can “Fuel Their Well-Being,” with food prepared “Chopped-in-Shop” daily. The concept has expanded from Arizona into Texas and Georgia, with locations across the Phoenix, Dallas-Fort Worth, Houston, College Station, Tucson and Atlanta markets.
As of the company’s January 2026 growth update, Original ChopShop reported 27 locations and said it was continuing to concentrate expansion in markets where it had already established a presence. The company opened in College Station in 2025 and continued its Texas expansion in 2026, including shops in Fort Worth’s Medical District, Houston’s Memorial City area and Richardson.
That strategy is increasingly visible around Greater Houston. Original ChopShop currently lists Houston-area restaurants in the Galleria, River Oaks, Memorial City and The Woodlands, along with the forthcoming Katy location and another planned shop in the Baybrook area of Webster.
For Katy, that means the new restaurant will extend a brand already familiar to diners closer to central Houston farther west along the I-10 corridor.
What Will Be on the Original ChopShop Katy Menu?
The menu is one of the things that sets Original ChopShop apart from many traditional fast-casual restaurants. Rather than focusing on a single category, the company serves protein bowls, salads, sandwiches, all-day breakfast, superfruit bowls and parfaits, fresh juices, protein shakes, kids meals, snacks and beverages.
Among the brand’s current “Most Loved” selections are the Teriyaki Chicken Bowl, Spicy Korean Steak Bowl, Hot Honey Chicken + Hummus Bowl, Thai Coconut Chicken Bowl and Chop-Rito Chicken with Salsa Roja.
Guests can also build or modify meals around different proteins and bases. Bowl proteins may include grilled chicken, steak, shrimp or tofu, while available bases can include choices such as rice, greens and vegetables. Salads can similarly be customized with added proteins.
For breakfast diners, the brand has moved beyond the traditional morning cutoff. Original ChopShop expanded into all-day breakfast, with current choices including avocado toast, breakfast wraps and a build-your-own breakfast bowl. The company said the move was designed to give guests more flexibility throughout the day.
There is also a substantial drinks side to the menu, including made-to-order juices, protein shakes, teas, lemonades, coffee and seasonal beverages. Current juice choices range from Power Green and Kale Cleanse to fruit-forward options, while protein shakes include selections such as Muscle Malt and Piña-Kale-Ada.
A Menu Built for Different Diets — and Families
One of Original ChopShop’s bigger selling points is customization.
The company markets its menu as food for “Every/Body,” with options that can accommodate a range of eating preferences, including items that are gluten-free or can be modified for guests avoiding dairy, lactose or soy, as well as vegetarian and vegan choices. Its online menu identifies which dishes can be modified for several dietary preferences.
That variety may be particularly useful for Katy families trying to find one restaurant that works for adults and children with different tastes.
The kids menu currently includes choices such as a Kids Teriyaki Chicken Bowl, turkey or ham “Sammie,” PB+J and White Cheddar Cheese Crisp, generally served with fruit. The broader menu also gives parents options ranging from salads and protein bowls to sandwiches, breakfast and smoothies during the same visit.
Why the Katy Location Stands Out
Original ChopShop’s arrival adds another fast-casual concept to a part of Katy where residential growth, retail development and restaurant openings continue to reshape the I-10 corridor.
It also brings a somewhat different mix than the typical burger, chicken or Tex-Mex restaurant. Someone could stop in for avocado toast and coffee in the morning, grab a protein bowl at lunch, order a fresh juice after a workout or pick up dinner for a family with different dietary preferences — all from the same menu.
That breadth has been part of the company’s growth strategy. Original ChopShop reported record brand sales for 2025 and said customer traffic increased 5.4% for the year, while continuing to expand within existing markets such as Texas.
For Katy diners, the biggest question now is exactly when those doors will open.
The construction schedule points toward completion in spring 2027, and Original ChopShop is officially advertising Katy as a 2027 opening, but a specific opening date has not yet been posted.
