As a child in a Mexican household, food was more than sustenance for Chef Thomas. It was a medium of expression, a bonding agent in a multicultural community, and an avenue for self-discovery. Little wonder he took to the culinary arts like a fish to water, honing his skills in some of Los Angeles's finest restaurants before embarking on his lifelong dream.

Belly of the Beast first came to life in 2020, providing a haven for food lovers and connoisseurs. After a two-year stint, the eatery took a breather, allowing Chef Thomas to engage in other culinary pursuits. However, in November 2023, the Belly of the Beast returned with renewed zest and vigor.

Situated at 5200 FM 2920 RD Ste 180, Spring, TX 77388, Belly of the Beast serves as a canvas for Chef Thomas's culinary dreams. The menu is a testament to the rich memories of his cultural upbringing blended skillfully with influences from his travels.

The restaurant's offerings span a flavorful array, from the Pato Pibil, a Mexican inspired dish featuring a savory duck leg, to the refined Italian delicacy of Potato Gnocchi. Not to mention the Pea Mezzaluna and Grilled Octopus, a nod to multiple cuisines, each dish is a story cooked with love and plated with respect for the ingredients' integrity.

Belly of the Beast's innovative culinary approach has earned it accolades, with Chef Thomas Bille bagging the “2023 Chef of the Year” award from Nick's Local Eats.
