San Antonio’s close ties to Mexico are reflected in everything from culture and family connections to business and food. Now, a restaurant concept with roots in Puebla is beginning its U.S. expansion in Stone Oak.
Fresh Bowl & Co. opened its first U.S. restaurant Sept. 18, 2026 at La Arcata Retail Center, 115 N. Loop 1604 E., Suite 2103, bringing customizable bowls, salads and wraps to the busy North Loop 1604 corridor.
For Stone Oak residents, the opening adds another fast-casual dining option focused on customizable meals and fresh ingredients. For the company behind Fresh Bowl & Co., San Antonio represents a much bigger step: bringing a restaurant concept developed through years of experience in Mexico into the U.S. market.
From Puebla to San Antonio
Fresh Bowl & Co. was founded in 2025, according to the company, but the experience behind the brand goes back much further.
The company says Fresh Bowl & Co. grew from more than 15 years of experience with Salad Bowl, a restaurant concept based in Puebla, Mexico. Salad Bowl built its identity around customizable meals, allowing customers to select bases, proteins, vegetables, toppings and dressings to create meals suited to their preferences.
That distinction is important. Fresh Bowl & Co. is a newer U.S. brand, while the restaurant model and team behind it have been shaped by more than a decade of operating experience in Mexico.
Published reports have identified Monica García Perdomo, Juan Carlos Haces and Javier Menéndez Pandal among those involved in developing and bringing the concept to San Antonio.
According to recent reporting, the related Salad Bowl operation has four locations in Mexico, making the Stone Oak restaurant the first U.S. location connected to the concept.
“We are excited to bring something we have spent years developing in Mexico to the community we now call home,” Menéndez said in a release. “We want people to walk in, see the variety, build something they genuinely enjoy, and leave feeling that fresh food can be convenient, colorful, and full of flavor.”
