Aleyotl Coffee & Bakery Brings Mexican-Inspired Coffee, Matcha and Fresh-Baked Treats to Fairfield Area in Cypress

Coffee drinkers around Fairfield have a new local stop to discover, and its menu brings some distinctly Mexican flavors to the morning coffee run.

Aleyotl Coffee & Bakery recently opened at 28404 Hempstead Road, Unit G09, in Cypress near the Fairfield H-E-B, following a soft opening on Sept. 11. The independently owned coffee shop comes from the family behind Las Llardas Mexican Restaurant and combines specialty coffee and matcha with Mexican flavors and a small-batch artisan bakery.

For Fairfield residents, the location adds another locally owned option, whether the plan is an early coffee before work, an afternoon matcha or a pastry and a place to sit for a while. Aleyotl is currently open seven days a week from 7 a.m. to 8 p.m.

Mexican Roots Meet Cypress Coffee Culture

The family describes Aleyotl as a new project inspired by its Mexican roots, but the connection runs deeper than simply adding a few familiar flavors to a coffee menu.

The concept draws inspiration from the family's heritage in Michoacán and Mexico City. Even the name has a story behind it, combining inspiration from the colorful Mexican folk-art creatures known as alebrijes with "yollotl," the Nahuatl word for heart.

That background comes through most clearly in the drinks. Rather than building a menu around only the coffeehouse standards, Aleyotl has paired espresso, cold brew and matcha with flavors many customers will recognize from Mexican candies and traditional drinks.

Among the signature offerings are the Mazapán Latte, Duvalín Iced Latte, Horchata Cold Brew and Oaxaca, along with a Lavender Agave Latte and El Dorado.

Matcha drinkers have options of their own, including a Matcha Latte and Horchata Matcha. Café de Olla, the traditional Mexican coffee typically associated with warm spices and piloncillo, is also available.

Familiar Coffee Favorites Are on the Menu, Too

Customers looking for something simpler will still find the coffee shop staples. Aleyotl's clásicos include espresso, Americano, cortado, latte, iced latte and cappuccino.

Cold brew and hot tea are also available, while customers can customize drinks with additional flavors, alternative milk or cold foam.

The other half of the concept is right in the name. Aleyotl pairs its coffee program with freshly baked goods from its small-batch artisan bakery, giving Fairfield and Cypress residents another option for coffee and pastries close to home.

A New Chapter From a Family Already in the Restaurant Business

Aleyotl may be new, but the family behind it already has experience introducing Houston-area diners to Mexican food.

The new Cypress coffee shop grew from the Las Llardas Mexican Restaurant family, whose restaurant roots center on traditional Mexican dishes and antojitos such as tortas, tacos, pambazos, huaraches and other familiar favorites. The Las Llardas brand has been serving flavors inspired by Mexico City for well over a decade. 

Aleyotl takes that connection in a different direction. Instead of recreating the restaurant experience inside a café, the family has built a coffee and bakery concept of its own, using drinks such as horchata matcha, Café de Olla and candy-inspired lattes to bring pieces of that culinary background into a format that feels at home in Cypress.

That makes the new shop an interesting addition to an increasingly varied Cypress coffee scene, particularly for Fairfield-area residents who enjoy supporting independent businesses without having to travel far from the neighborhood.

Grand Opening Still to Come

Although Aleyotl Coffee & Bakery is already serving customers, the business remains in its opening chapter. The café has said customers should follow its social media pages for its official grand-opening date and other updates. Recent reporting indicates the grand opening is expected later in October.

In the meantime, the doors are open, the espresso is flowing and Fairfield residents have a new neighborhood spot to decide on a favorite, whether that turns out to be a straightforward cappuccino or something a little more adventurous, like a Duvalín Latte or Horchata Matcha.
